Why does my iPhone video play sideways?

iPhones and most smartphones store rotation as metadata rather than physically rotating the video frames. Many video platforms (YouTube, social media embeds, some desktop players) ignore this metadata flag and display the raw frames — which appear rotated. Which rotation should I choose to fix my sideways video?
